Peanut Butter Cacao Chia Seed Pudding
Chia seeds are a great source of plant-based protein, they contain omega 3s to support heart and brain health, and they’re loaded with soluble fiber which can help lower cholesterol and support digestive health. This version makes a delicious, nutrient-dense snack or you can eat it for breakfast (despite the cacao, it’s not too sweet)!
In case you’re wondering, cacao is the less processed version of cocoa powder so it contains more nutrients and usually contains little to no added sugar.
One other thing I love about chia seed pudding — it takes less than 5 minutes to prepare and it’s portable, so it’s a great meal or snack for folks who are pressed for time.
Ingredients:
1/4 cup chia seeds
3/4 cup milk of your choice (I like toasted coconut almond milk or regular skim milk)
1/2 teaspoon cacao powder
1/2 teaspooon honey
For serving:
1 tablespoon peaunut butter (I’ve used almond butter too and it’s just as delicious)
Blueberries, blackberries, or strawberries
A sprinkle of cacao nibs (I have no affiliation with them, but I like this brand)
Instructions:
Combine the milk and cacao powder in a small jar and whisk until the powder is fully absorbed without clumps. Add the chia seeds and honey stir it all or put the lid on the jar and shake it to combine. Let it sit in the fridge overnight.
To serve, scoop the chia seed pudding into a bowl and drizzle the nut butter over top. Top with slivered berries and a sprinkle of cacao nibs.
