Matcha Chia Seed Pudding
I was recently reminded how yummy chia seed pudding can be, and I’ve been experimenting with different flavors and toppings to make it a fulfilling breakfast or snack. Matcha is a Japanese green tea powder that’s loaded with antioxidants and may have cancer-fighting properties. Chia seeds are a great source of plant-based protein and full of soluble fiber, which supports digestion and can be helpful for those with cholesterol concerns.
Ingredients:
1/4 cup chia seeds
3/4 cup milk of your choice (I like toasted coconut almond milk or regular skim milk)
1/2 teaspoon matcha powder
1/2 teaspooon maple syrup
For serving:
1 tablespoon apple butter or raspberry preserves
Chopped almonds or walnuts
Raspberries or other fruit
Instructions:
Combine the milk and matcha powder in a small jar and whisk until the matcha powder is fully absorbed without clumps. Add the chia seeds and maple syrup; stir it all or put the lid on the jar and shake it to combine. Let it sit in the fridge overnight.
To serve, spread the apple butter or raspberry preserves in the bottom of a bowl, top with the chia seed pudding. Sprinkle with chopped slivered almonds or walnuts and add fresh raspberries, or other fruit on top. be sure to dig your spoon into the bottom of the bowl when you’re eating it so you get some of the preserves or apple butter in every bite!
