Perfectly Roasted + Caramelized Sweet Potatoes
I discovered the most delicious way to roast sweet potatoes.
Preheat the oven to 375 degrees.
Scrub the potatoes, cut them in half, and place them on a parchment covered baking sheet. Drizzle the potatoes generously with olive oil and sprinkle with salt and pepper or everything-but-the-bagel seasoning. Toss to coat.
Roast them, cut side down, for about 40-45 minutes. Flip them halfway through—you’ll know they’re done when they’re tender and have slightly caramelized, golden edges.

These potatoes make a great side dish for dinner. I suggest roasting extras and then using the leftovers to make loaded baked potatoes for a satiating and delicious lunch. Here are some topping ideas:
