AVOCADO-GRAPEFRUIT SALSA
This bowl of yummy (and colorful!) goodness makes a great topping for grilled fish or chicken, is great alongside eggs, or as a more savory topping for plain greek yogurt. It also makes the perfect quick snack or lunch served with whole grain crackers or tortilla chips for dipping.
INGREDIENTS:
1/4 cup minced red onion
1 small grapefruit, peeled and chopped into small chunks
1/2 cup thinly sliced fennel bulb
1 avocado, chopped into small chunks
1/2 cup cilantro leaves chopped
3 Tablespoons olive oil
1 T red wine vinegar
salt and pepper to taste
INSTRUCTIONS:
Stir all ingredients in a medium bowl, let sit 15-30 minutes to allow flavors to blend, and enjoy!
