Autumn Harvest Spinach Salad
I love salads but sometimes I just don’t feel like making them or I get bored with my usual go-to options. I threw together this simple combo recently, and I’ve been making it on repeat because it’s just so dang yummy—and quick!
Ingredients:
For the salad:
4-ish cups of raw baby spinach, washed
1/3 cup of very thinly sliced red onions
1/2 of a honey crisp apple, thinly sliced
1/3 cup red grapes, halved
3 stalks of celery, diced
1/4 - 1/3 cup goat cheese, crumbled (depending on how cheesy you like your salads)
1/4 cup slivered almonds, roasted (I love the Trader Joes dry toasted slivered almonds)
For the dressing:
1/2 cup of olive oil
1/3 cup of red wine vinegar
1 tablespoon of dijon mustard
1 teaspoon of honey
salt and pepper to taste
Instructions:
Combine all of the salad ingredients in a bowl. Add all of the dressing ingredients to a small jar, fit with a lid, and shake to combine. Dress the salad to taste.
Not enough time to whip up a homemade dressing? Try dressing it with your favorite olive oil and flavored vinegar combo. I’ve used a cilantro-onion flavored olive oil, paired with cinnamon-pear balsamic and it was just as yummy.
