TOASTED PUMPKIN SEED GRANOLA

This is a cross between trail mix and granola, and it’s seriously addicting. Not only that, it’s packed with health benefits. One-quarter cup of pumpkin seeds gives you about 9 grams of protein, 3 grams of fiber, a decent amount of iron, heart-healthy omega-3 fatty acids, and other important nutrients. The almonds are chock-full of omega-3s and also contain calcium, iron, zinc, and other key vitamins and minerals. AND it’s super easy to make!

INGREDIENTS

  • 2 cups shelled pumpkin seeds

  • 1 cup slivered, unblanched almonds

  • 1 cup dried cranberries

  • 1/2 cup of shredded, unsweetened coconut

  • 3 tablespoons maple syrup

  • 1 teaspoon cinnamon

  • 1/2 teaspoon ground nutmeg

  • 1/2 teaspoon ground ginger

  • 1 teaspoon vanilla extract

INSTRUCTIONS 

1.     Preheat the oven to 300°. Spray baking sheet with cooking spray

2.     Spread pumpkin seeds and slivered almonds on baking sheet and roast for 10 minutes

3.     Remove seeds and nuts from oven, place in a bowl and add coconut, maple syrup, spices, and vanilla; toss until everything is thoroughly coated

4.     Spray the baking sheet again, spread the whole mixture onto your tray, and bake for about 15-18 minutes, until seeds and nuts are toasted and just beginning to turn golden. Remove from oven. Stir in cranberries.

5.     Cool and enjoy. Store in an airtight container.

RECIPE NOTES

This yummy snack is great to eat by the handful, but you can also sprinkle it on top of salads, oatmeal, yogurt, cereal, avocado toast, and more.
