HEARTY CABBAGE AND GROUND TURKEY SOUP

This delicious soup is very filling, nutrient dense, and full of fiber and protein. Even the kids gobble it up! In fact, my son recently announced that, “it’s his favorite soup.” Feel free to use whatever veggies you have on hand (although I consider the cabbage a must) and just adjust the water or broth as necessary. I usually make a big pot, serve it for dinner with some crusty whole grain bread, and then portion the rest into 6-oz mason jars. Throw them in the freezer and they make a perfect grab-n-go lunch for busy days.

INGREDIENTS

  • 1 lb ground turkey

  • 2-1/2 cups thinly sliced green cabbage

  • 1/2 cup chopped yellow onion

  • 6 cups low-sodium chicken broth

  • 4 tablespoons tomato paste

  • 1/2 cup chopped carrots

  • 1/2 cup chopped green beans

  • 1/2 cup frozen corn

  • 1/2 cup chopped celery

  • 1/2 cup chopped zucchini

  • 4 cloves minced garlic

  • 1 teaspoon dried oregano

  • 1 teaspoon dried basil

  • 1 teaspoon salt

  • 1/2 teaspoon ground pepper

INSTRUCTIONS

  1. Spray pot with canola oil cooking spray; heat over medium heat and brown meat until nearly cooked through

  2. Add onions, garlic, carrots, and celery and saute until softened, 5-10 minutes

  3. Add cabbage, green beans, zucchini, chicken broth, tomato paste, spices, salt and pepper and heat over medium heat for 10-20 minutes until all vegetables are tender.

  4. Add frozen corn and heat another 5-10 minutes.
