FRESH APPLE SALSA

This is a super yummy (and easy!) autumn salsa. Try spooning it on top of your favorite grilled or broiled fish…eat it with whole grain crackers for an easy snack…or sneak some veggies into your breakfast by placing a heaping dollop on your next omelet.

INGREDIENTS

  • 1 large honey crisp apple, finely minced

  • ½ cup red onion, finely minced

  • ½ cup bell pepper, finely minced (red, yellow, or orange pepper preferred)

  • 3 Tbs mint, finely chopped

  • 2 Tbs olive oil

  • 1 Tbs balsamic vinegar

  • Salt & pepper to taste

INSTRUCTIONS

  1. Combine everything in a bowl and mix thoroughly.

  2. Let sit for 20-30 minutes to allow flavors to blend

  3. Eat and enjoy!
